From the Cube Roll Bone – in Frenched, comes our Prime Rib Dry – Aged. Can be used as a whole cut for roasting or a portion cut to order. Either way it is a rich experience with juiciness and flavor in abundance. The spine, feather bones and cap are removed allowing the chef to carve in front of customers. Rib Bones are intact.
Carcasses are selected based on age of animal, weight of the carcass, fat colour and evenness of cover and overall appearance.
